Mexican Beef Brisket
Serves: 5
Prep Time: 5 minutes
Cooking Time: 30 minutes
Total Time: 35 minutes
Ingredients:
½ tablespoon sugar-free tomato paste
½ tablespoon chili powder
½ onion, sliced thinly
Salt and freshly ground black pepper, to taste
1½ pounds grass-fed beef boneless brisket, trimmed and cut into 1½-inch cubes
¼ cup roasted tomato salsa
½ tablespoon olive oil
3 garlic cloves, peeled and smashed
½ cup homemade beef broth
Directions:

  1. Toss the beef, chili powder, salt and black pepper together in a large bowl.
  2. Put the olive oil and onions in a pressure cooker.
  3. Sauté for 3 minutes and add garlic and tomato paste.
  4. Sauté for about 1 minute and add beef, salsa and broth.
  5. Lock the lid and cook for 25 minutes at high pressure.
  6. Release the pressure naturally and dish out to serve hot.
